Instructions
  1. Wrap the beets loosely in aluminum foil and roast until easily pierced with a fork, 40 minutes.
  2. Set aside to cool. Skins should peel right off. Dice and put in refrigerator.
  3. Break the walnuts into small pieces and place in large bowl.
  4. Add chopped beets and mango. In a smaller bowl whisk sweetener and orange juice until well-blended. Pour over beets.
  5. Combine mangos and walnuts. Toss gently until glazed and serve.
