Asian-inspired Snow Pea Salad
This savory exotic salad adds color to any table and goes well with my recipes of Tom Kha Coconut Soup and Edamame Dumplings. Only five ingredients, it is quickly prepared and stays fresh and stores well in the refrigerator for future meals.

Instructions
  1. Blanch snow peas in boiling water for 8 to 10 seconds, then shock quickly in ice water. Pat dry.
  2. In a medium bowl, combine the snow peas, bean sprouts and red pepper.
  3. Toss with the soy sauce, sesame oil and sesame seeds.
  4. Season to taste with salt.
  5. Serve chilled.

Instructions
  1. Wrap the beets loosely in aluminum foil and roast until easily pierced with a fork, 40 minutes.
  2. Set aside to cool. Skins should peel right off. Dice and put in refrigerator.
  3. Break the walnuts into small pieces and place in large bowl.
  4. Add chopped beets and mango. In a smaller bowl whisk sweetener and orange juice until well-blended. Pour over beets.
  5. Combine mangos and walnuts. Toss gently until glazed and serve.
