5 Ingredient Fig and Banana Cookies with Cardamom
- 2 overripe bananas, mashed
- 1 and 1/4 cup ground almonds (make sure you don’t pack the almonds into the cup or you’ll end up with much more)
- 1 1/4 cup dried figs, chopped
- 1/2 teaspoon cardamom
- 1 tablespoon chia seeds
- optional: 1 tablespoon natural sweetener of choice
Step 1: Preheat the oven to 400 degrees F.
Step 2: Combine all ingredients in a bowl and let sit for 5-10 minutes.
Step 3: If the mixture still looks too runny (depends on size and ripeness of bananas).
Step 4: Drop 1 to 1 and 1/2 tablespoons of the dough on a cookie sheet lined with parchment.
Step 5: Flatten the cookies to a desired thickness (dough doesn’t spread while baking).
Step 6: Bake for 7-10 minutes, until the cookies firm up and the edges start to turn a bit golden.
Step 7: Let cool completely.
