5 Ingredient Fig and Banana Cookies with Cardamom

Serves 12

Ingredients

  • 2 overripe bananas, mashed
  • 1 and 1/4 cup ground almonds (make sure you don’t pack the almonds into the cup or you’ll end up with much more)
  • 1 1/4 cup dried figs, chopped
  • 1/2 teaspoon cardamom
  • 1 tablespoon chia seeds
  • optional: 1 tablespoon natural sweetener of choice

Preparation

Step 1: Preheat the oven to 400 degrees F.

Step 2: Combine all ingredients in a bowl and let sit for 5-10 minutes.

Step 3: If the mixture still looks too runny (depends on size and ripeness of bananas).

Step 4: Drop 1 to 1 and 1/2 tablespoons of the dough on a cookie sheet lined with parchment.

Step 5: Flatten the cookies to a desired thickness (dough doesn’t spread while baking).

Step 6: Bake for 7-10 minutes, until the cookies firm up and the edges start to turn a bit golden.

Step 7: Let cool completely.

Instructions
  1. In a food processor, add all the ingredients and blend until smooth. Be sure to scrape the sides to ensure all is blended thoroughly.
  2. Spoon into glasses and serve with fresh berries.
  3. * Drizzle Cashew Cream
Recipe Notes

*Cashew Vanilla Cream

  2 cups raw cashews, soaked for 3-4 hours to soften

  1/4 cup liquid sweetener like agave nectar

  3/4 water, coconut water, or unsweetened non-dairy milk

  2 tsp vanilla extract

  pinch of fine sea salt

In a high speed blender, blend all the ingredients until smooth.  Depending on the strength of your blender, the smoothness will vary.  You may also need to scrape the sides from time to time.  Will keep for about a week in the refrigerator
